Aidani is a white wine grape found mainly in the western islands off the mainland of Greece, particularly Santorini. It is also grown extensively on the island of Rhodes. It is used with the Assyrtiko grape as part of a white-grape blend called Brousko (there is also a red and rose Brousko), but is seldom used on its own. It is lower in sugar and acidity than Assyrtiko and so contributes delicacy and aroma to the blend as it produces a wine often described as floral-scented, with a slight Muscat aroma. Blending two varieties like this can produce a more consistent wine from one year to the next, as the proportions and harvest times of the two or more varieties can be varied in order to even out the variations due to harvest conditions. Aidani is also used in a dry or semi-sweet wine blend with Assyrtiko and Athiri, and it may also be used with these two in Vinsanto. With Athiri alone it is used on the island of Naxos to create the sweet white wine Apiranthos.
