The Soave Blend reflects the varieties which are permitted in the Italian DOC in the Veneto of the same name. The blend is also used for some wines labeled under the less stringent Veneto IGT designation.
Garganega forms the bulk of the wine. In dry whites it provides structure, with its steely mineral character and fruit components of citrus and stone fruits. Or, when late-harvested and air-dried for sweet passito wines, Recioto di Soave, it adds richer tropical fruits and honey notes. Soave DOC laws stipulate that at least 70% of the blend is made of Garganega.
Soave Classico wines are produced under the Soave DOC of Veneto, north-eastern Italy, specifically from Soave's traditional classico vineyard zone. They are dry, still white wines made predominantly (at least 70%) from Garganega grapes. In the past decade Trebbiano Toscano and Pinot Bianco have been removed from the official makeup of Soave wines, leaving Chardonnay and Trebbiano di Soave (Verdicchio) as the only other grapes specifically sanctioned for use in the wines.
Soave is arguably the most famous white-wine DOC in Italy. Granted in 1968, the DOC title covers wines made from Garganega grapes grown on the hillsides east of Verona, in the Veneto wine region of north-eastern Italy.
