Rye whisky and rye whiskey are subtly different, and are distinguished by more than just their spellings. "Whiskey" is the common American and Irish spelling. "Whisky" is the British and Canadian spelling.

Rye whiskey is most commonly associated with whiskeys produced in the United States from a fermented mash of grain containing not less than 51 percent rye. Like all American whiskeys (with the exception of those made from corn), it must be matured in charred new oak containers. If the maturation period exceeds two years, the whiskey may be additionally designated as “straight”, therefore becoming “straight rye whiskey”. Old Overholt is the oldest and perhaps the most famous straight rye whiskey, although there are also straight ryes made by other famous brands, such as Wild Turkey and Jim Beam.
