Cabernet Sauvignon and Pinot Noir, the star grapes of Bordeaux and Burgundy respectively, might seem an unlikely pair, being so entirely different. They are, however, used together in a surprising number of modern red wines, mostly those produced in the Americas. The earthier, blackcurrant aromas of Cabernet Sauvignon theoretically meld well with the undergrowth and cherry characters of a good Pinot Noir – the reason that so little of this combination is made may well be because both varieties make such excellent wines their own right and in their own, very different, styles.
