  Cava is the name synonymous with the sparkling wines of Spain. The Cava DO (Denominación de Origen) is reserved for sparkling blanco (white) and rosado (rosé) wines made using the méthode traditionnelle.

  The Cava DO was introduced in 1970, in a move designed both to hallmark Spain's best sparkling wines and distinguish Cava from French Champagne.
