It is a wine in its own right, a terroir wine that we wanted to make for the long term. Over the years, the vintage effect will fade, slip away, to restore only the terroir and the personality of its soils. The salinity of Clos Mireille, the power of Château Romassan, the finesse of Château de Selle remain and will survive the year. Its contribution is thus very interesting because this material clarifies the fruit, brings it more to light, specifies it and stretches it.

Depuis 1912, la famille Ott cultive, entre ciel et mer, l’élégance provençale. Trois domaines, un style : précis, solaire, sans excès. À Bandol, à La Londe, à Château Romassan, l’exigence est la même. Domaine Ott signe ici, avec cette cuvée «Étoile», un rosé de gastronomie éclatant. Dès le premier nez, une fraîcheur ciselée surgit: écorce d'agrumes, fleurs blanches, touche iodée. Puis viennent les fruits à chair blanche — poire d’été, pêche de vigne — en filigrane, portés par une tension minérale admirable. En bouche, c’est une danse. L’attaque est nette, cristalline, presque saline. Le vin glisse, caresse, élance. Aucun sucre résiduel, aucune lourdeur. Juste un équilibre d’orfèvre entre acidité vivante et matière satinée. On y décèle un soupçon d’amande fraîche, de fraise, un zeste de citron confit, et cette finale longue, droite, qui rappelle la roche chaude et le vent marin. Ce vin rosé «d’auteur» ne cherche pas à séduire; il impose son style, tout en retenue, en élégance. Servir à 10 °C. Il sera le partenaire idéal du homard, de la bouillabaisse, des côtes de porc poêlées au romarin, du filet de morue à la provençale, des crevettes grillées, ou du tartare de thon.

A precise, well-built and seductive rosé with aromas of forest berries, dried orange peel and fresh flowers on the nose. It’s medium-bodied with bright acidity. Attractive character on the palate, with texture and poise. It has plenty of verve and focus, with a long finish. From organically grown grapes. Drink or hold.

Notes of cherry blossom and rhubarb mark this velvety and big-boned, yet vibrant rosé. It turns a bit neutral, but keeps acidity on the moderately long finish.

This is a delicate and balanced rosé with subtle notes of peaches and wild strawberries and touches of seashells, crushed stone and dried Mediterranean herbs. Medium-bodied, sleek and polished, with freshness and excellent poise. Classy, elegant, pristine and almost weightless, yet it holds a lot of depth and mineral complexity that unveils toward its long finish. From organically grown grapes. Drink or hold.

Very pale coral color with aromas of cherry stones, raspberries, rose petals and pink grapefruit. It’s elegant, delicate and fresh with a medium body. Focused, too, with a lengthy finish. Drink now.

A notion of white peach opens the subtle nose. More air and temperature then reveals hints of Mirabelle plum and a lovely hint of pink grapefruit, alongside a touch of wet pebble. The palate then surprises with its immense texture: this is where the wine shows its true self, with wonderfully smooth, pithy mouthfeel, zesty freshness and an immense sense of juiciness. Lovely now, will evolve.

Tasted: Jan 2022
Wet pebble and ocean breeze are the two first intense notions on the nose. This is followed by the pure scent of strawberry sorbet edged with lemon. The palate is wonderfully rich and textured, brimming with ripe strawberry fruit that seems to have an apricot intensity. More air makes the wine verge even into passion fruit territory. Both texture and intensity are extraordinary. The finish is fresh and long.
