Producer tasting notes: "Like our rosés, which are capable of long aging, Étoile has a very great ability to evolve. It is a wine in its own right, a terroir wine that we wanted to make for the long term. Over the years, the vintage effect will fade, slip away, to restore only the terroir and the personality of its soils. The salinity of Clos Mireille, the power of Château Romassan, the finesse of Château de Selle remain and will survive the year. With time, the wine will gain volume, defy its contours, as if to root its terroirs deeper at its heart." - Domaines Ott

We wished to preserve the duality of the containers, both stainless-steel vats and spherical ceramic vats, but with a higher proportion of ceramic, as this material creates a brighter, more fruit-forward wine. Its contribution is thus very interesting because this material clarifies the fruit, brings it more to light, specifies it and stretches it.
