Dezenter Anflug von Eisbonbon in der Nase, gepaart mit weissen Früchten. Am Gaumen relativ trocken, frisch, kühl. Feinwürzig, weisse Johannisbeere und etwas Limette im Abgang. Die Säure bleibt im Finale stehen.

Sur les hauteurs ensoleillées de la Provence, entre oliviers et lavandes, le mistral joue les chefs d’orchestre, tempérant la chaleur et donnant aux raisins cette vivacité qui fait chanter les vins rosés. Au coeur de ce terroir, le Domaine de la Grande Séouve, qui produit ce rosé sous la marque "Aix", s’est imposé comme l’un des ambassadeurs les plus fiables du rosé provençal. Au nez, le "Aix Rosé 2024" révèle des aromes d'agrumes, de fraise des bois et de pêche. Et puis cette touche subtile de basilic froissé qui donne le ton: fraîcheur, finesse, précision. En bouche, l’attaque est nette, désaltérante, presque saline. Le vin glisse, porté par une acidité vive mais jamais agressive. On retrouve la groseille, l’abricot frais, un zeste d’agrume, et en finale, une pointe d’amande douce qui prolonge l’expérience avec grâce. Rien de lourd, tout est dans la tension et la délicatesse. Ce n’est pas un simple rosé: c’est la Provence dans un verre — sans chapeau de paille, mais avec style. Servir à 12 °C. Un régal avec les coquilles Saint-Jacques, la bisque de homard, les côtelettes de porc, la bouillabaisse, le ceviche, les crevettes grillées, le filet de saumon, ou le homard grillé.

(2025) A blend of Grenache, Syrah and Cinsault from some of the appellation's highest vineyards at 420m above sea level. Delicate and fruity, raspberry and marshmallow spring to mind, the palate following on with a dry, gastronomic character, small red berries but a very clean mineral and lemon finish.
