It is situated on a very old plot of the Estate that had long since been planted with red vines and then been dug up because of the high risk of spring frosts. Production techniques, as well as the selection have been completely reviewed since the years 2009/2010 in order to reach a higher level of excellence; only 1/3 of the harvest is bottled, the remaining 2/3 is sold loose. So the quantity of Pavillon Blanc has been greatly reduced and isn’t more than one thousand cases.

Lemons, honeysuckle, green apples, pears, vanilla, and white peaches are at the front of the aromatic profile. The palate is packed with sweet, ripe, juicy, yellow, and orange citrus, green apples, and a mélange of pears. Sweet, vibrant, and lively, the wine is ready for the start of its prime time drinking window. The wine is produced from 100% Sauvignon Blanc.13.4% ABV. 3.18 pH. Yields were only 14 hectoliters per hectare, so not much of this wine was made. Drink from 2027-2038.

Really pure and precise, with a fascinating mineral drive to the fruit. Bright but textured on the palate, with a medium to full body. There is a subtle saline twist but it’s refreshing and driven, with excellent weight and length. The acidity really brightens it. 100% sauvignon blanc.

The 2017 Pavillon Blanc from Chateau Margaux needs a little coaxing before it leaves the glass with notes of lime leaves, orange blossom, and yuzu, plus wafts of chalk dust, coriander seed, and sea spray. Medium-bodied, the palate delivers a whole other level of Pavillon Blanc experience, delivering a shimmery backbone of acidity to perfectly frame the intense citrus and floral layers, finishing long and minerally. Stunning - a 20-30 year Bordeaux blanc for sure. From 2017 the cork is Diam 30 and it is in the dark green bottle.

Opulent and delicious with lots of green mango and pineapple aromas and flavors. Smoked cream and green apples. Showing salty, briny character, it’s dense but not heavy, flavorful and very long. Pear-drop candy at the end. Pure sauvignon blanc, as always. Rich yet lively and wonderful. Feels like a great Montrachet. One for the cellar. 8,000 bottles made. You just want to drink it. Drink or hold.

It is one of the best vintages of Pavillon Blanc that I have tasted. The wine is produced from 100% Sauvignon Blanc. 13.3% ABV. Drink from 2024-2037.

Aromas reminiscent of yoghurt’s distinctive tanginess. It has a crunchy texture, yet subtly intertwined with oiliness to add depth. A hint of varietal sweetness blends into refreshing acidity. Harmoniously balanced. Longlasting flavour profile and layered texture, likely the result of battonage, with a slight bitterness rounding out the overall experience.

This is quite a big Pavillon Blanc with sliced pineapple, ripe apple, lemon and stone. It's full-bodied, layered and phenolic with a ripe sense to it, but then it’s citrusy and salty. Like fresh oysters. Reminds me of vintages from the 1980s, but with more freshness and clarity. 100% sauvignon blanc.

This is very tightly wound, with dried apples, limes, blossom honey, flint, light mangoes and some lemon curd, as well as hints of stone. Medium- to full-bodied with tangy acidity and white peaches, Meyer lemons and minerals. It is focused and very refined. There's plenty of compact fruit, and the energetic acidity is phenomenal. Drinkable, but give this three or four years.

The palate is dry and rich textured with flavors of passionfruit & asparagus - it has a lovely pungency. The alcohol adds a little roundness. The finish is long with a soft rounded texture.
