2021 Paxton 'Now' Shiraz

Aromas of raspberry and blackberry pie, a dep core of ripe red berry fruits, lots of peppery spices, a vibrant, fresh and very enticing bouquet. Flavours on the palate not only mirror the bouquet, but are even more intense than expected. Contrasting fruit tannins and acidity lead to flavours of purple fruits, plums and spices. Deep, with dense inky dark-purple, lighter on edge. The nose is full and attractive, filled the glass with vibrant nuances of blackcurrants, plums, melded with wildflowers, violets and a peppery lifting. Full-bodied, aromas of blackcurrants, plums enriched by liquorice, black pepper and violets fragrance. The wine is mouth-filling with natural powdery tannin extraction, unfolding subtle graphite minerals. Juicy, bright fruit supported by lively, balanced acidity. This is a beautiful, naked expression of Shiraz with juicy black fruit on a natural, powdery tannin structure. Match with lamb kabab and braised beef brisket over the next 2-3 years. Open top fermenters, around 20 days hand plunged, fermented to 14% alc, transferred to tank for MLF and brief ageing. No So2 or preservative added, organic and biodynamic certified. 18.5+/20 pts
