Critic tasting note: (2001 vintage) "(2003) A deep seam of tight, glossy, blue/black fruit. Very focused and pure. Solid, grippy, dense and thick fruit on the palate with a liquorice edge of extraction and a muscular character. Sinewy and powerful, but good ripe, spicy, powerful fruit too. - Recognized from the outset as a Cru Bourgeois du Médoc, Château Tour de Pez is the result of the strict selection of the finest grapes from the estate to produce a wine that first and foremost asserts its Saint Estèphe identity, expressing its origins and its terroir with intensity. Polished by expert, precise winemaking, and mellowed through contact with oak, it offers amazing finesse of tannins, silkiness, balance, and superb freshness that lingers in the mouth.

Its varied soils of clay and limestone clay are the terroirs of the future. In this part of the Médoc the chalk bedrock sometimes breaks through as there are fewer deposits of river gravel. The soils of Saint Estèphe form a mosaic that is more often sandy-clay or limestone-clay than the other communal appellations of the Médoc.

Since 2019 the grapes have all been picked by hand, a task that takes 25 people two weeks to accomplish.

On arrival, the grapes are meticulously sorted by an optical sorting machine, a technique which may be less traditional, but which is much more precise than hand sorting. Already tried and tested at Château Arnauld, cold pre-fermentation maceration was the big revolution introduced in 2020. The cellar is now equipped with double-walled truncated vats that integrate a cold-water cooling circuit. These enable to grapes to be chilled by 15° to delay the onset of fermentation for as long as possible and prolong non-alcoholic maceration, to obtain maximum aromatic complexity, finesse, and smoothness.

Immediately following its malolactic fermentation the wine is transferred into traditional oak barrels (70% new, 30% one wine old) where it will mature for 14 months.
